Field to Table: What It Really Means to Honor an Animal

What does it really mean to honor an animal? In my latest Washington College course, students went beyond the classroom to explore hunting, whole-animal butchery, nose-to-tail cooking, and the responsibilities that come with eating meat. But this experience was particularly meaningful because one of my students was my own son, Billy. What began as a hands-on exploration of food, ethics, and sustainability became one of the most memorable experiences of my teaching career.
