This Valentine’s Day, we’re leaning into chocolate but doing it the Modern Stone Age way. In this hands-on class, you’ll learn how to make chocolate treats that feel truly indulgent while using better ingredients, thoughtful techniques, and a more nourishing approach.

Chocolate has a long and fascinating history as a revered food, not just a sugary indulgence. In this class, we’ll begin by grounding ourselves in that tradition - covering the basics of how chocolate is made, how to source high-quality chocolate, and how to work with it properly in your own kitchen.

From there, you’ll get hands-on as we transform chocolate into healthier versions of timeless favorites. Throughout the class, we’ll focus on techniques you can return to again and again, not just one-off recipes.

During the class, you’ll learn:

  • The fundamentals of chocolate: where it comes from, how it’s made, and what to look for when sourcing high-quality chocolate

  • How to properly temper chocolate for shine, snap, and stability

  • How to transform chocolate into more nourishing, thoughtfully sweetened desserts

Together, we’ll make a trio of classic chocolate treats:

  • Chocolate Ganache - rich, smooth, and versatile, using simple, intentional ingredients

  • Chocolate Mousse - light yet deeply satisfying, made without shortcuts or artificial additions

  • Hot Chocolate Bombs - a fun, giftable treat that brings together technique, creativity, and comfort
